RASPBERRY COBBLER

Type of Recipe: Pies and Cobblers

Difficulty: Easy

List of Ingredients:
1 cup sugar
3 Tbsp. cornstarch
1 cup water
1/2 tsp. vanilla
4 cups fresh or frozen raspberries
Topping:
1 cup flour
3/4 cup sugar
1/4 cup margarine (or butter)
1 beaten egg

Directions:
Mix sugar, cornstarch, water, and vanilla. Cook over medium heat until thick. Add berries and pour into baking
dish. For topping, mix flour, sugar, and margarine as if making pie dough. Add egg. Mixture should appear
crumbly. Sprinkle over fruit mixture. Bake at 400 degrees for about 40-45 minutes or until topping is lightly
browned.

BLACKBERRY PANCAKES

Type of Recipe: Breads, Muffins and Pancakes

Difficulty: Easy

List of Ingredients:
1 cup blackberries
2 eggs
2 cups buttermilk
2 cups flour
1 tsp baking soda
1 tsp salt
1 tbls sugar
2 tsp baking powder
1/4 cup butter, melted



Directions:
Beat eggs until light and fluffy. Beat in buttermilk and soda. Sift flour, salt, sugar and baking powder. Add flour
mixture to egg mixture, beating well to make a thin batter. Add blackberries and butter. Fry on a hot buttered
griddle until puffy and golden brown, turning cake only once. Serve very hot.

BERRIES AND GREENS SALAD

Type of Recipe: Salads

Difficulty: Easy

List of Ingredients:
8 cups torn mixed greens
3 cups raspberries, halved strawberries, blueberries, sliced peaches, nectarines and/or plums
2/3 cup raspberries or strawberries
1 Tbsp. honey
1/2 cup plain yogurt
1 Tbsp. white wine vinegar
Toasted sliced almonds, optional

Directions:
Gently toss greens with 3 cups desired berries or fruit in salad bowl. For dressing place the 2/3 cup berries in a
blender container or food processor bowl with the honey; blend or process until smooth. Combine blended berries,
yogurt, and vinegar. Drizzle over greens and fruit; toss. Sprinkle each serving with nuts, if desired. Serves 6.







FRESH RASPBERRY PIE (NO BAKE!)

Type of Recipe: Pies and Cobblers

Difficulty: Easy

List of Ingredients:

9” baked pie shell or graham cracker crust
1/2 cup water
3 pints fresh raspberries
1 cup sugar
3 Tbsp. cornstarch
1/4 tsp. salt
1 Tbsp. butter or margarine




Directions:
Cook 1 pint raspberries, mashed in a sauce pan with water, sugar, salt and cornstarch. Stir and cook over low heat
until thick. Add butter. Cool (place hot pan on a bowl of ice while you clean up). When cool fold in the remainder
(2 pints) of fresh uncooked raspberries. Gently pour and spread into prepared pie shell. Refrigerate 3 hrs. Serve
with whipped cream.
